Killinchy Gold Layered Lemon Curd Dessert

 

Ingredients

  • 1 litre Killinchy Gold Lemon Curd ice cream
  • 1 packet superwine biscuits 
  • 1 cup desiccated coconut 
  • 30g melted butter 
  • 1 teaspoon lemon zest 
  • 250ml fresh whipped cream 

Method

  •  Blend the superwine biscuits, coconut, butter, and lemon zest together. 
  • Fill the glasses with half of this crumb mix. 
  • Add a layer of Killinchy Gold Lemon Curd ice cream 
  • Add a third layer of whipped cream
  • Finish the final layer with the crumb mix. 
  • Follow the instructions below to make the topping. 

Ingredients

  • 2 egg whites
  • 1/3 caster sugar 
  • 1 teaspoon lemon juice 

Method

  •  Beat the egg whites until soft peaks form. Then add 1 dessert spoon of castor sugar at a time, until the mixture is thick and glossy. 
  • Finally, beat in the lemon juice.
  • Pipe the topping on top of the layered dessert. 
  • Serve with Killinchy Gold Lemon Curd ice cream.
